If you happen to try it, let me know what you think.<\/p>\n<h3>Taco-Pasta Salad<\/h3>\n<p><b>Servings:<\/b> 2<br \/>\n<b>Preparation Time:<\/b> 20 minutes<\/p>\n<p><b>Ingredients:<\/b><br \/>\n2 portions rotini pasta (about 4 oz uncooked)<br \/>\n2 portions lean ground beef (about 1\/2 lb)<br \/>\n3\/4 cup water<br \/>\n1 Tbsp taco seasoning mix<br \/>\n1 green bell pepper, diced<br \/>\n2 Tbsp salsa<br \/>\n2 Tbsp fat-free sour cream<br \/>\n2 Tbsp reduced-fat cheddar cheese, shredded<br \/>\n<!--more--><br \/>\n<b>Directions:<\/b><br \/>\n<b>1<\/b> &nbsp; Prepare rotini pasta according to its package directions.<\/p>\n<p><b>2<\/b> &nbsp; While the pasta is cooking, brown ground beef in a medium skillet over medium heat until no longer pink. Drain the beef of any excess fat and return it to the skillet.<\/p>\n<p><b>3<\/b> &nbsp; Add water, taco seasoning and bell pepper to cooked ground beef; simmer until the sauce thickens, stirring occasionally.<\/p>\n<p><b>4<\/b> &nbsp; While the beef is simmering, combine salsa and sour cream in a small bowl.<\/p>\n<p><b>5<\/b> &nbsp; Place a portion of pasta on two separate plates. Top with a portion of ground beef mixture. Sprinkle each with half of the cheese and a dollop of salsa-sour cream sauce.
