Nacho Nacho!

I love Mexican food. Anything that takes some of my favorite foods – meat, cheese, sour cream, onions and salsa – and puts it together, is a friend of mine. I enjoy making, and eating, various Mexican dishes at home too.

My first exposure to Mexican food was when I was a kid. My mom would make tacos, although she didn’t use any taco seasoning on the beef like I do. She also liked taking us to Taco Bell. In fact, that was where I was first introduced to guacamole. Yea, I know theirs is nothing to sneeze at, but it made me realize that just because it may look gross (baby poo green, anyone?), it may actually taste great! But usually I just got a soft beef taco (because I only liked flour tortillas) and an order of nachos. To this day I still love their nachos.

On the quest to find the perfect nacho cheese sauce for homemade nachos, I’ve tried every brand available at the store in the past few months: Old El Paso, Ortega, Pace, and even some no-name ones. They are all crap. I finally decided to buy some Velveeta and make my own concoction. On the same grocery trip, I came across Fritos brand jalapeno cheddar dip. Let me just say, yum-o! I’ll still have to experiment with the Velveeta, but I found a winner. The cheese is almost exactly like the cheese that brought me to the school skating parties when I was younger. Don’t get me wrong, I loved the roller dome, but my main objective was the nachos at the concession stand. Those were the single best nachos I’ve ever had in my life. They’d smother the chips in cheese and I’d sit and chat with friends as I let that cheese work its way into the chips until they were soggy and delicious. Mmmmm…. I can almost taste them.

A-hem! So anyway, yes I am a Mexican food addict. I want to make my own enchiladas one of these days, I just keep putting it off for some reason. Wait, I know, because I can be lazy and buy a kit from Old El Paso! It’s really good too … except I think it feeds four and between my husband and me it’s one meal. Yea, and I wonder why I’m not losing any weight, right? I can’t help it: cheese is my weakness. If you saw all the shredded cheese in my refrigerator right now you’d think I was a mouse!

Oh and I really don’t eat those flour tortillas anymore. I prefer soft corn. You?

  1. I too am a Mexican food addict! You need to come to California… since we’re so close to Mexico. I wonder how mid-western Mexican compares…

    I love nachos too. My usual meal in junior high was the cafeteria nachos. THey looked really lumpy and gross, but just like the roller rink nachos you described, the chips were completely smothered and I loved when they got a little soggy. I’ll have to try that Frito dip you mentioned!
