Frugal Easter

As I removed the Easter decor from my storage tote last weekend I realized I had nothing to put up on the front door which I found odd. All these years and I didn’t have anything to hang there? So the quest began to find something inexpensive but cute. The first stop was Kohl’s. Sure, they are usually overpriced, but often they will have holiday decor 50% off, which they did, but the only cute thing they had this year was an Easter wreath that was regularly $35 and there was no way I was spending $17. Target didn’t have much that was appealing either, but I scored at Walmart. I got this glitter egg for only $2.

They also had a 4-pack of little glitter bunnies for 97 cents so I put them between other decor on the mantel. Aren’t they cute?

As far as food goes, I ended up getting 2 dozen eggs for only 45 cents after sales and coupons so we can color a bunch when E comes over. I found a ham for only $6 at Meijer whereas the same size ham was $17 at Target. Sure, it’s not pre-sliced, but who cares? It also didn’t come with any glaze but I found a recipe online that I plan on using.

Food Stuff

I’ve been doing my best to keep myself busy while off which is why I’ve been trying a lot of new recipes. I’ve found that Pinterest is one of the best ways to discover new ones. Most of the recipes I’ve tried have been winners, such as these:

Baked Garlic Brown Sugar Chicken – Holy schnikies, is this stuff awesome! I was skeptical about cooking chicken at such a high temperature, so I lowered the oven to 475 degrees, but this came out awesome! It has a Chinese flair to it and I can’t wait to make it again. In fact I’ll probably make it later this week and make some jasmine rice and oriental green beans as sides.

Baked Cream Cheese Spaghetti – I’ve made this one twice already. It gives the spaghetti a nice creaminess I love. I like it better than regular spaghetti with meatballs.

Cheeseburger Macaroni – Move over Hamburger Helper, this is the real deal. Not only does it taste light-years better than a boxed version (although I haven’t touched Hamburger Helper in at least five years, if not longer), it’s got a nice kick to it. I was surprised that E ate it, but was pleased that he did.

Crescent Pepperoni Roll-Ups – I wasn’t sure these would turn out as good as they sounded but they exceeded my expectations. I alternated between using pizza sauce and I definitely recommend you use a bit of pizza sauce so they don’t come out dry. A little goes a long way with these – between three of us in the house we had one left over and we only used one can of the crescent rolls. They are deceptively filling and would make a great little appetizer for a party, although they were fine for a quick dinner too.

Crockpot Pineapple Chicken – Easy and yummy, this dish tastes great served over rice. Joe liked it a bit more than I did, but I would definitely make it again.

Dark Chocolate Frozen Banana Bites – There’s no link to these as I came up with this one on my own after being inspired by the ridiculously expensive Dole-brand frozen bananas my mom had at my brother’s birthday party. It’s bananas and chocolate, how hard can it be? Well, it’s not hard once you know what you’re doing, and that took me two tries. The first time was a bust but the second time I nailed it. Here’s what I did: First I sliced a banana and put the slices on some wax paper on a cookie sheet. I slid that into the freezer. About two hours later I took some chocolate chips, put them in a microwave safe bowl with a little bit of vegetable oil, and microwaved them until they were soft (you have to keep checking on it so you don’t over-do it and burn the chocolate). Once the chocolate was melted and stirred I brought my bananas out of the freezer and using a spoon dipped them one by one in the chocolate, coating them completely. I returned them to the wax paper-lined cookie sheet and back to the freezer. Later that evening I just grabbed a couple when I got the craving. Not only does the oil keep the chocolate from seizing up during the dipping process, but it also keeps the chocolate from becoming too hard once frozen. That way you don’t break a tooth and the chocolate doesn’t break off in chunks when you bite into it. Since I only did about half a banana’s worth as I was still in the experimenting stages, I left them on the cookie sheet. I think they would be fine if you wanted to move them to a container once they were fully frozen, however. Much better than paying $4 a box for the Dole version!

Oatmeal Banana Breakfast Muffins – These came out great but I didn’t follow the directions. I ground up the oatmeal in the blender and then combined all the dry ingredients in one bowl and the wet in another and then gently mixed them together. I think if you blend everything together at once you’re going to end up with a rubbery muffin. I plan to make these again real soon because they make for a great little breakfast, although the next time I’m going to add some chocolate chips to at least half of the batch.

Despite what feels like a non-stop eating fest I’ve still been losing weight. I actually fit in the smallest size of jeans I own now! Those have been collecting dust for YEARS. Woo hoo!

In addition to new dishes I’ve also become very interested in the best ways to preserve food so it doesn’t go to waste. For instance, my SIL bought some avocados the other day but we weren’t planning on making anything to utilize them and as you probably know avocados tend to ripen quickly – there’s usually a one day sweet spot in which to use them before they start turning brown inside. I found some advice online and I was able to salvage one of them (the other had over-ripened) by mashing it up, adding some lemon juice, putting it in a ziplock bag with all the air squeezed out, and freezing it. Believe it or not but it’s still green! Now we can use it whenever the mood strikes us.

I also learned you can freeze limes so when they were on sale I bought four and popped them in the freezer. I almost always need limes when I don’t have any and who wants to run to the store? I’m way too lazy for that! I chopped up a bunch of green onions and put them in an old cleaned out Parmesan cheese shaker (those plastic ones Kraft sells) in the freezer as well. Those are another item we tend to not have on hand when they are needed. And finally, I cleaned up some celery and put it in aluminum foil in the fridge because I read that it will stay fresh for weeks that way.

As you can see, I’m a bit obsessed, but these little things have helped us cut down the grocery bill. Even when I go back to working I’m going to keep doing these things because I love saving money and not being wasteful.

What’s going on

Right now I’ve got chili in the crockpot and I still haven’t showered for the day because I’ve been pretty busy. In addition to throwing that together this morning, I also worked out on the elliptical machine, descaled the coffee maker, did two loads of laundry, put away the St. Patrick’s Day decorations and replaced them with Easter decor, re-organized my glass beads, went through the mail, dusted and decluttered the house a bit, and created a cute Easter basket for my stepson.

I stopped making baskets for the kids on a consistent basis because they never seemed to care, and perhaps they still don’t, but I really like doing it so I made one anyway. Nothing big, but I like how it came out.

I noticed that I really don’t spend a lot of time watching tv during the day, yet it still flies by. Sure, I’m on the internet a lot, although last week I watched a few movies thanks to the local library. I’ve been getting through my list of movies I’d like to see with all this time on my hands. I like that I can rent 5 movies at a time for “free” (I put that in quotes since my property taxes pay for the library’s services). My local library has even started getting new releases in on Bluray. You can only rent them for one night but I still think it’s great. The library is less than five minutes away and not much further than the local Redbox. I just have to be flexible in what I want to watch.

Yesterday my brother came over since he didn’t have to work. We hit the library to borrow a few video games and went to lunch at Buona Beef since I’m restricting myself to eating at places where I have a gift card. The card I have for them is so old I was surprised it worked! I also forgot how good their cheeseburgers are and not a bad price at $5 either. I still have almost $10 left on my gift card too.

I’ve been put in charge of updating Adopt-A-Pet and Petfinder with the rescue organization at which I’m volunteering but that doesn’t take up much of my time – probably a few hours a week, give or take. A lot of that time is due to waiting for the Petfinder site to respond; it has to be the slowest website I’ve ever dealt with! I can post five cats on Adopt-A-Pet in the time it takes to post one on Petfinder. In any case, it’s been busier lately because of all the cat shows in the area which causes the adoption rates to rise. I don’t mind, though, because I like keeping busy.

My brother asked me the other day why when he’s not working he is lazier than when he is, and I’m not sure why, but I’m the same way. The more I have to do in a given day the more motivated I feel. The less I have to do the more depressed I feel and the lazier I become. This is why I’ve been doing what I can to keep busy, including entering sweepstakes. I know it sounds a bit silly but whatever. It’s free, keeps me occupied, and I won $15 from VISA so far.

I recently decided to get my little 2-gallon aquarium going. Initially I wanted to buy some mollies because I wanted to have more than a single fish, but after reading up on fish-keeping I learned it would be inhumane to keep more than one fish in my small tank and that ideally the tank should be 10 gallons at the very least. As we don’t have the money right now to buy a new aquarium kit or stand (since the IKEA tv stand I was thinking of using would not be able to hold a full 10 gallon tank of water), I decided to get a Betta instead.

So off to Petsmart we went on Sunday to do just that. Coincidentally, the Bettas were on sale. I ended up getting a mostly red Half Moon Betta and an ivory Mystery Snail to keep him company. We named the snail Gary, after the character in Spongebob, but thinking of a name for the fish has been difficult.

Google Reader

Yesterday it was announced that Google Reader will be no more as of July 1st. I couldn’t be more disappointed, as well as pissed off at Google. I’ve always disliked Google to a certain degree because they seem really inflexible. It’s part of the reason why even though I have two gmail accounts I still use Yahoo for my main emailing. A lot of my dislike stems from the fact that the company I used to work for had arrangements with them to provide a service for which they would not accommodate any of our requests which made it difficult to make a profit. In fact last I heard they were coming up with other ways to bill our clients for the services we were getting from Google because the reports they provided did not allow us to automate the invoicing, thus it wasn’t making us any revenue.

In any case, I use Google Reader constantly. I do mean constantly. If I’m not checking the updated feeds via the Google Reader site in Firefox I’m checking it through Feeddler on my iPhone or iPad. I can’t imagine a better way to keep on top of the newest posts from my favorite sites and being able to keep my progress and starred articles synched. It seems a lot of people would agree, and on top of that, there really aren’t any comparable alternatives right now.

I understand that RSS feeds aren’t as popular as one might hoped, which is apparent from the crickets I got in response to my Facebook update yesterday bemoaning this development, but that doesn’t mean they aren’t useful or appreciated. They’d probably be utilized by more people if they understood what they were, or more importantly, how beneficial they are. Who reads articles on actual websites anymore? I rarely do. I get the majority of my news via Google Reader and Twitter, and with Twitter I send the articles to Pocket to read later.

Needless to say I’m really upset about all this and will likely delete my Google+ account soon. Might as well before Google decides to do it for me. Besides, it’s not like it’s going to end up being the Facebook killer they hoped it would be. Oh, and I might just switch to Bing for my search needs as well.
